dc.description.abstractThe project included: establishing the criteria for identification and traceability tracking, throughout all stages of production and distribution of a wine in order to ensure its harmlessness and quality. The scientific results obtained was innovative, significant and applicable at the industrial level. The realization of the technological process of vinification of grapes from the local Rara Neagră variety from 2 wine-growing regions (Stefan Voda and Romanești) under FTA micro-vinification conditions allowed obtaining 4 lots of top quality red wine. The use of the second-order derivative of the absorption spectra provided information about the individual components and the changes that the chromatic, organoleptic and antioxidant characteristics undergo in different technological processes.en_US
