Abstract: 
The invention relates to the food industry in particular to the process of dehydrating peaches, which can be applied to enterprises in the food industry, in laboratories and research centers related to the drying process.
The object of the invention is to apply the process of dehydrating peaches using the forced convection method and reducing energy consumption by optimizing the duration of heat treatment of the product.
