Abstract: 
he upcycling of wine by-products and the recovery of oils, phytonutrients, pigments, dietary fibres and bioactive substances from grape skin and seeds, contribute not only to minimizing the environmental impact, but also to obtaining added value for the winemakers. Consequently, considerable research is being carried out to determine the content of the biologically active substances in the wine by-products and the methods to extract and use them in the production of supplements and natural food additives with antioxidant, antibacterial, antifungal properties, etc. [1]. The aim of the research was to evaluate, by the spectrophotometric UV-Vis method (spectrophotometer DR5000), the total content of polyphenols (TPC) and the total content of flavonoids (TFC) in three types of hydrophilic extracts from the seeds isolated from the fermented pomace of the Moldova native grapes variety.
