Abstract: 
The invention relates to the wine industry, namely to a process for producing wine. The process, according to the invention, comprises accepting the grapes of white or pink varieties, their crushing and destemming to obtain fresh marc, infusing the marc, separating and clarifying the fresh must, alcoholic fermentation of the must, at the same time closer to the end of alcoholic fermentation or after its completion, a solution of plasmolyzed yeast is introduced, obtained by mixing dry yeast with must or with a solution of granulated sugar.
